DailyBuzz Moms 9x9: Black Bean Soup 

There is nothing more delicious than a hot bowl of black bean soup. It's my go to comfort food for the winter. Daily Buzz Moms have invited me to share the recipe with you and with their fabulous readers! I've adapted the recipe my grandmother had (which took about 2 days to prepare)  to a quick 20 minutes. 

20 minute Black Bean Soup

Ingredients

-2 tablespoons olive oil

-1 yellow onion, chopped (about 1 1/2 cups)

- 2 carrots diced

-2 garlic cloves diced

-2 tablespoons cumin

-1 bell pepper diced

-2 cans of black beans (I love Bush's Black beans)

-1 cup orange juice

-2 cups chicken stock

-2 cups of polska kielbasa sausage cubed

Salt to taste

Pepper to taste

Toppings

sour cream

cilantro

avocado

cheese

Directions:

1. In medium sized soup pot, sauté onions and carrots in olive oil till tender. Add cumin, garlic, and bell pepper and sauté for about 2 minutes.

2. Drain and add black beans, juice, sausage and stock. Heat until simmering. 

3. Using an emergent blender, blend until soup consistency is smooth. (You can also use a regular blender)

4. Add your preferred toppings and enjoy!
